Since then he has created meals for A-List Celebrities, major politicians, famous sports figures, prominent business leaders and hungry diners across the spectrum as a private restaurateur and having worked for Hyatt Regency, where he ran several of their 5-star restaurants including a Teppanyaki restaurant, Italian restaurant, Japanese restaurant, and even their Las Vegas style buffet restaurant.

Chef Matt: The Five Star Chef

The story of Matthew Stockard, America’s premier cannabis chef as we know him, begins with a trip to Dubai — or rather a cancelled trip to Dubai. As a renowned and in demand culinary expert who created delicious meals around the world, and operated 5 star restaurants in major hotels in major metropolitan cities, was now being summoned to Dubai do perform his magic in yet another major 5 star restaurant. Just as he was making his final arrangement to leave for the Middle East, he got a call from and old friend that would forever change his life and cancel his plans for Dubai. The longtime friend called the Chef and asked if he still knew how to make cannabis barbeque sauce. The Chef went to see his friend and taught him the intricate process of crafting this sauce.
This is when everything changed for Chef Matt.
Chef Matt quickly realized the potential of combining CBD
and cannabis with food and his new cooking empire was born.
We had the opportunity to ask Chef Matt a few questions
this is what he had to say.
Q: Do you cook with CBD regularly at home?
A: “Everyday. It’s the way I’ve incorporated into my lifestyle. It’s a creative way of taking CBD and
having it in your lifestyle versus taking it as a medicine or taking it in a tincture.”
Q: How do you decide how much CBD goes into a meal, as far as extracts like honey or olive oil?
A: “It just depends on the recipe, the average is 25mg of CBD in most meals. You at least want
25mg, because anything less and your body will not get the full benefits. That’s why a lot of the
products I have created usually have around 250mg total and around 25mg per serving.”
Q: What would you say are some of the differences between cooking with CBD and cannabis?
“The only difference is really that you have to worry about the dosing, as with cannabis you
have to determine what a good amount is. Whereas with CBD there’s really no limit to how
much you can put in.”
Q: Do you think that the CBD business will grow more than it has?
“Yeah! as more people get educated it will. But I don’t mean yes in that people should get into
the CBD business as a “get rich” scheme or a gold rush. If you make or sell smart products and
put CBD in it, there’s always a 50/50 chance that you could do good, or not. You can’t just put
CBD in something and expect to get rich, it really doesn’t work like that.”
Q: What would you say has led you to your success in the CBD business and cooking with CBD
“I just do what comes natural to me and what makes sense, I don’t worry about what other
Q: Do you have any advice for people trying to be successful in the CBD business?
“I have advice for business in general. Do what you want to do and stop bouncing ideas off the
people around you. Sometimes when your ideas are too farfetched for the people around you,
they’re going to talk you out of it. If you have an idea just go for it instead of worrying about
pitching it to others. If you’re successful it’ll work out, if not you’ll learn from it. When I started my
first cannabis company, I kept wanting my friends to be a part of it, I had to get to the point
where I realized this is my dream and I had to go my own way.”
Q: You probably have to work out a lot with legality, right?
“Trust me it’s not that hard, first thing you have to do is stop listening to everything you hear.
Once you get in this business, you’ll figure out how to get around it. It’s not hard to do anything,
you have to just be creative. In any business you have to be creative.”
Q: So, you need something beyond just the CBD as a selling point?
“If you look at the market it’s over-saturated with lots of stuff. When I started doing what I do,
there were very few CBD cooks. The World Canna Health and Chef Matt Olive Oil, we’re not
standing by our olive oil because it has CBD in it. This is an award-winning olive oil that we’re
selling that just happens to have CBD in it, we’re not just grabbing the cheapest olive oil we can
find and throwing CBD in it. I’m a chef so all my products are going to be the highest quality
Q: So, the quality sets you apart from everyone else?
“It’s a business for some of the other companies that are doing it, but it’s kind of a passion that’s
near and dear to me because I love food and the science behind food. I can tell you everything
about my olive oil, from me standing under the olive tree and the entire process. The honey I’m
using - I could go talk to the bees today!”
Q: So if you want good ingredients you have to pay a little bit more?
“My honey costs a little bit more because I’m using real honey, and not syrup flavored honey.
And you’re going to taste it in the end. If you know me, you’ll see the passion. No amount of
money could make me sell someone something that isn’t going to work.”
Near the end of our interview, Chef Matt said something that made me immediately understand
what he was all about, he told me, “You can forget to take your medicine but you can’t forget to
eat.” This proves his point that working CBD into your lifestyle as a food instead of a pill or
medicine is a very viable way, and it’s great for older people and those who are new to using
CBD as a whole.
Chef Matt's Delicious Cornish Hen Dinner with Chef Matt's CBD Olive OIl
Chef Matt's CBD Cornish Hen
2 Cornish hens (Cut in half)
1 ½ tsp Garlic powder
1 ½ tsp Onion powder
2 1/2 tsp Paprika
1 1/2 tsp ground Allspice
1 1/2 tsp dried Thyme
1 tsp ground black pepper
1/2 tsp nutmeg
2 tbsp. Chef Matt's CBD Extra Virgin Olive Oil
1. Preheat oven to 400 degrees
2. Toss Hens with 1 TBS of Chef Matt's CBD Extra Virgin Olive Oil. Then season with seasonings and allow to marinate for 3-4 hours.
3. Heat oven proof skillet on stove top and add remaining TBS of Chef Matt's CBD Extra Virgin Olive Oil. Add Hens breast side down and sear for 3-5 mins.
4. Turn Hens over and pop skillet in oven for 30-45 mins until internal temperature is 155 degrees.
Serve with your favorite sides
Chef Matt's CBD Broccolini with Chef Matt's CBD Olive Oil
Chef Matt's CBD Broccolini
1 bunch broccolini
2 tablespoons Chef Matt’s Olive Oil
1 tablespoon grated Parmesan
1 teaspoon minced garlic
1 tablespoon chili flakes
1/4 teaspoon freshly ground black pepper
• Blanch the broccolini in a large pot of boiling salted water for 2 minutes. Drain immediately and immerse in a bowl of ice water.
• Heat Chef Matt's CBD Olive Oil in a large saute pan. Add the chili flakes and garlic and stir. Drain the broccolini and add it to the garlic mixture and heat for 2 minutes. Add 1/2 teaspoon salt and the pepper, and toss well before serving.
